Butternut Squash Soup

Ladies! This recipe is SO simple & SO delicious!


1 medium sized butternut squash or 2 smaller ones

1 apple

1/2 of an onion

1/2 cup coconut milk

Salt to taste

Preheat oven the over to 425 F

  1. Slice the butternut squash in half and remove the seeds. Slice the squash into smaller slices to speed up the bake time. Prepare by placing the butternut squash, sliced apple & onion to ta baking pan. Add 2 tablespoons of coconut oil. Cover with tin foil and bake for 30 - 40 minutes. Once you can easily stick a fork through the skin of the butternut squash you know they are ready.

  2. Once cooled, remove the skin of the butternut squash and place into your blender or food processor. Add the apple, onion, coconut milk, & salt to the blender. Add 1/2 cup water and pulse until smooth.
